This easy homemade basil pesto is a versatile pesto that can be used on some many foods.
Ingredients:
1 bunch (packet) of fresh basil leaves
2 Tablespoons olive oil
1 tablespoon lemon juice
1 handful of grated parmeasan cheese
1 handful of cashew nuts
1 clove of crushed garlic
Method:
Place all ingredients into a blender or mini chopper and blitz until all ingredients are blended.
Use straight away or place in a container and it will keep for 1 to 2 days in the fridge.
Pesto is great with pasta, as a pizza sauce or with salad.
