Ingredients : 350g Strong Flour
7g Easy Blend Yeast
30g Caster Sugar
8g Salt
230ml Milk
30g Unsalted Butter
Oil For Frying
Makes 10 Donuts
Method : Put all the dry ingredients into a large bowl, keeping the yeast away from the salt. Warm the butter and milk together until the butter has melted.
Pour the milk and butter into the dry ingredients, knead on a dough hook for 7 minutes.
Put the dough in a greased bowl for 90 minutes and has doubled in size. Knock back the dough and knead by hand for 20 seconds.
Roll out the dough and using a 3 inch circle cutter cut out 10 donuts, using a 1/2 inch cutter cut out the middles, places the donut rings and holes on a tray, cover and leave for an hour.
Heat a deep fat fryer with fresh oil to 180c – 190c. Cook the donuts 1 or 2 at a time for 2-3 minutes each side and the hole for 1 minute each side.
Roll donuts in caster sugar while still hot or allow to cool and dip into a glaze made up of 150g icing sugar, 1 tsp of vanilla and some water mix to together for a runny consistency.
