Ingredients :
350g Plain Flour
100g Caster Sugar
100g Soft Butter
2 Eggs
2 Chopped Apples
1 1/2 tsp Baking Powder
1/2 tsp Cinnamon
1/4 tsp Vanilla
Method :
Pre heat oven to 180c Using a hand mixer beat the eggs, sugar and vanilla until pale and fluffy, add the butter and keep mixing until incorporated.
Add the flour, cinnamon and baking powder, mix until you get a thick smooth cookie dough, add the chopped apples and stir to incorporate into the dough.
Place spoonfuls of the dough onto a baking tray lined with parchment paper and bake for about 20 minutes.
To finish dust with powdered sugar.
